Dressing:
3 T rice wine vinegar
2 t sugar
2 T veg oil
2 t toasted sesame oil
Whisk together.
1/2 inch fresh ginger, peeled and sliced
2 large cloves of garlic
1 tsp salt
1 1/4 lbs cucumber, peeled, cut in half lengthwise, cut into moons
1 T toasted sesame seeds
3 T chopped cilantro
Smash ginger and salt in a mortar, add garlic and smash some more. Stop before it becomes a paste.
Add to the dressing.
Add the other ingredients. Let sit at least 10 mins.
