Grown Up Applesauce

from Fine Cooking:

8 apples, peeled and cored, cut into chunks
3 T unsalted butter
3 T water
1/2 vanilla bean, split
3 - 4 T granulated sugar
1 - 2 T brandy

Cook apples, butter, water, vanilla over medium heat for 25 minutes. Add sugar and brandy. Cool. Can save in frig up to a week.
