Pie Crust

from Splendid Table:

1 1/4 cups flour
1/2 t salt
1 T sugar
1 stick unsalted butter, very cold, cut into 1 in chunks
4-5 T ice water
1 T vinegar

In food processor, pulse flour, salt, sugar and butter until crumbly. Add water and vinegar. Pulse. Wrap in plastic wrap and put in frig for 30 min to overnight.

Don't over mix. Chill, chill, chill. Don't let in get warm until it's i the oven.
