2 cups dry white wine
1 cup water
1/2 cup sugar
1 piece of vanilla bean
3 pounds of peaches (about 8), peeled, halved and pitted
1 1/2 pounds of plums (12 - 15), halved and pitted
Combine the wine, water, sugar and vanilla bean in a saucepan and bring to a boil, stirring, for 4-5 minutes.
Simmer gently and add peaches and plums. Poach the fruit for 5 minutes, the turn off the heat.
Serve warm or store in fridge.
