Whole Wheat Peanut Butter Sandies

1 1/4 whole wheat pastry flour
1 t baking soda
1/4 t kosher salt
1/2 cup unsalted butter
1/2 cup natural peanut butter
1 cup Demerara or raw sugar
1 large egg
1 t vanilla

sift together flour, baking soda, and salt
cream butter, add peanut butter, add sugar, beat in egg and vanilla, beat in dry ingredients
wrap dough into a log in plastic wrap, refrigerate for 2 hours
Preheat oven to 350 degrees. Slice dough in 1/4 inch slices. Bake about 15 minutes.
